As a Registered Dietitian, Nichole has specialized in women's health, sports nutrition, diabetes, and heart disease. She also loves dark chocolate so much that she ran her own chocolate company, nicobella organics, for ten years. Her chocolates were featured in Veg News, Organic Spa, Yoga Journal, Huffington Post, and had a special debut on Rachael Ray as "Snack of the Day." Yoga Journal featured her as a yogi nutritionist focusing on the ethical side of chocolate through her chocolate company, nicobella, and its Fair Trade chocolate treats. For the past 14 years, her focus has been on plant-based eating for a healthy body and happy mind. Her book, "The Fiber Effect: Stop Counting Calories and Start Counting Fiber" and "The Vegan Athlete's Nutrition Handbook: The Essential Guide for Plant-Based Performance" are available through Hatherleigh Press everywhere books are sold. ​ She's been regularly featured on The Weather Channel and NBC-affiliate, Atlanta & Company and has written articles for Mind Body Green, One Green Planet, and The Path Mag.
